Hi All! I’m not sure how “regenerative” cafe con leche is, other than for the soul but we love it for a special treat. Steve and I went on our honeymoon to Guatemala and both of our favorite memory was the amazing cafe on leche that we were served at all of the restaurants. One in particular was so delicious. The restaurant had an open courtyard in the middle and then we ate on the balcony that wrapped around the courtyard. The most memorable part of that dinner was our coffee (I don’t even remember what we ate). Mmmm…
Steve decided to make some tonight and it brought back those memories so I thought I would share our simple recipe with you.
Ingredients:
- 3 heaping Tablespoons of Organic Fair Trade Ground Coffee (or coarse grind it yourself).
- approx 1C Boiling Water (whatever amount fits in your french press)
- 1C of organic whole milk (we usually use a milk mixture of 1/3C whole milk, 1/3 cup goat milk, 1/3 cup oatmilk – I can’t handle a lot of dairy)
- 1-2 teaspoon of sweetener (we use organic cane sugar or monk fruit)
- 2 cinnamon sticks
Instructions:
- Put 3T ground coffee into french press. (If you don’t have a french press, make 1-2 cups of coffee extra strong.)
- Pour boiling water over coffee grounds.
- Seep coffee in water for 7min.
- While that is seeping, put 1C of milk, sweetener and 2 cinnamon sticks into a pot on your stove top and turn it on low.
- Once the coffee is seeped, pour into milk mixture (through a strainer).
- Pour into your favorite coffee mug and enjoy!
